Baby Shower for Hayden - Part 1

We are a little late on posting about the baby shower my mom and sister threw for us and Hayden, of course, in October.

The shower was "jungle" themed, to follow along with the idea for our nursery.  Technically, the nursery is going to be animal themed, but I've always had a special place in my heart for jungle animals :)

I'm going to post the shower in two different parts, the first is going to be of the shower itself and all the fun times we had and the second part will be of the gifts that we so generously received from our guests :)

The cake was mirrored after our shower invitations. Although, I think do to space we had to eliminate the monkey in the tree.





My mom and I went to Party City for most of the decorations - jungle themed everything of course :)  On each table we had a large centerpiece, two smaller centerpieces, a Noah's Ark balloon and animal/baby themed confetti. The party favors were measuring tapes with animal prints on them.  Each guest had in front of them a blank envelope to fill out their address for the thank you cards, a marvelous idea and one I recommend for all showers, baby or not! 

They also had two different games in front of them, the first is in the cups and the second is a quiz paper.  In the cups on the tables (the clear cups with blue liquid), we froze a "baby" and everyone had to let the ice melt around their baby.  Once the ice all melted, they would yell out "My water broke!", the first 4 people to do that one a prize.

The quiz game was a super neat idea sent in by Ben's grandma, who was unable to attend since she lives in Albuquerque.  As the guests arrived, we played different songs about animals and later on we had the guests answer questions based on those songs. If they were paying attention to the songs as they walked in, all the answers were playing for them. :)  For example, what animal did Elton John and Susie rock around the clock with? - Answer: A Crocodile.
  
We played two other games - Price is Right - Baby Edition - How much does it cost? and Bingo as we opened gifts.  

The shower was so much fun and I am so thankful for my sister and mom for throwing it for us :) Little Hayden got many wonderful gifts! A huge thank you to everyone who could attend or sent a gift :)

1st Birthday as a Mama

I celebrated my 31st birthday last Wednesday and truly began realized that I am a mother.  I had a wonderful birthday and Hayden got to celebrate with me, as he will for many years.  Ben made it extra special!

He surprised me with an ice cream cake from Dairy Queen (a tradition for my birthday since I was younger) and a gift certificate for an hour long prenatal massage.  I had been thinking for a few weeks about wanting to get a massage, but hadn't said anything to Ben about it.  The sweetest thing is that Ben had to work overnight at his 12-hr shift job and got done with work at 6:30 AM; however, he stayed out until past 11 AM to pick up the cake, telling me he had to work late.  I am so incredibly blessed to have this wonderful man as part of my life!  When he got home, he put candles on the cake (a 3 & a 1, 31 candles would be too many lol), lit them and sang happy birthday to me in bed.  I worked the night before and was resting for work that night.  We had cake, which for a pregnant woman, ice cream cake first thing after waking up was amazing!  Later on, Ben took me out for lunch to Chili's and then I headed off to work.  I truly wonderful day!

I got to celebrate with my mom and grandma on Friday.  I went straight to my grandma's house after work on Thursday (early Friday morning).  We went out to Rogers, which for those who don't know is a large flea market in Ohio not far from my grandma's.  Mom and I found a woman selling baby clothes for $1/piece.  We got quite a few outfits for Hayden!  Friday night my grandma made macaroni and cheese and my mom made hot sausage for my birthday dinner - I had been craving both.  They surprised me with cake also.  Saturday, Mom and I went shopping for my birthday and got some maternity clothes for me. 

Hayden got to share in all this excitement and I can truly say it was more thrilling for me to feel him move than anything else.  A couple days last week he danced around my whole drive to work.  I don't know if it was the music, me singing or both, but he was a happy little guy :)  All and all this is a birthday I will always remember, so many wonderful things and so many wonderful things to come :)

This coming weekend is my baby shower.  My mom and sister are putting it all together and I'm so excited to visit with family and friends and share in this wonderful occasion in Ben and I's life.  Living in PA, as most of you know, you plan things around the weather and therefore, we are having the shower a little earlier than is tradition.  Since Hayden is due in February, the shower would have had to be held in December, not a good month for many reasons - snow, holidays, busy schedules, etc. 

I have had individuals reach out to me and ask about PCOS and my pregnancy and my job while pregnant, so I thought I'd touch on that briefly.  I am not termed a "high risk pregnancy", the doctor is treating this as a normal pregnancy, unless something arises, which has not yet.  The biggest problem for women with PCOS is actually getting pregnant.  Once they do become pregnant, the risks are the same as a woman without PCOS.  We do have a tendency to get gestational diabetes, but at this stage of my pregnancy it is too early for the doctor to detect.  We will be testing for it, as all pregnant woman do, in a month or so. 

The doctor is very happy with the baby's development and my health currently.  They monitor everything closely and give specific instructions, as they do for all pregnancies (PCOS or not), to call with any concerns or changes.  I see doctors through UPMC/Magee Women's Health - a top hospital for women's health in PA, as well as the country I do believe. 

There have been concerns surrounding my job from a few followers.  My job is very labor intensive; however, for a woman with PCOS that is pregnant the exercise is good for me.  I have been told that by both the first doctor and the second doctor.  I do have limitations, but they are set by me and what I feel comfortable with doing.  Since I was doing this job before I got pregnant, there is no concern that I can do it while pregnant.  Lots of literature states whatever you did pre-pregnancy, you can do during pregnancy and the doctor has re-iterated this information to me.  My boss is well on board with adjusting my work as needed.  As I progress further into pregnancy, we've talked about moving me to a more stationary position without any heavy lifting or work on a machine.  Currently he is leaving it up to me when I transition.  I work with a wonderful group of people who already are looking out for me and don't let me do too much.  For example, last week when restocking the shelves, one of the guys took a certain area because it tends to contain heavier product so I didn't have to lift a lot. 

I'm taking everything day by day.  No one knows my body as well as me and I have learned from the past and having PCOS to read my body very closely.  Currently my body is feeling great and as things change I will change with them.  Hayden is my #1 priority and I won't do anything to jeopardize his development.

Exciting Developments

It sure has been a long time since I posted on this blog and life has sure been interesting and full of twists and turns...Ben and I have moved to Pennsylvania in January of this year (2013), just outside of Pittsburgh (GO BUCCOS!!!!), due to my work in Albuquerque being outsourced.  I am still with the same company, but transferred into a different position. It's nice to be back in PA where I grew up, as did Ben for a short time.  My whole family is here and his Dad lives here, only 20 minutes from my parents, which is weird.  We do miss all our family and friends in Albuquerque, especially Ben's family, who mostly live there.

It was a big decision to stay within the same company but to move our lives 2000 miles away.  We packed up our fur "children", of which only number 2 cats and a dog.  We lost Harley in August 2012 to what we think was uterine cancer in cats.  Luckily, we got Sassy checked out after we lost Harley and found out she had cancer as well.  We had her fixed and she's better than ever, still living up to her name :)

We've settled into our new life in PA, Ben works for two different hospital systems and is training to become a nurse.  Our schedules are hit and miss, I work nights and he works a variety of hours.  We find time for each other and go off to explore our new surroundings.  We've gone out fishing on his dad's boat numerous times, headed up North to visit with our parents, gone to the zoo, headed farther east to Penn's Cave, etc.  I couldn't have chosen a more perfect person to explore and live my life with, especially with the biggest adventure of our lives just starting...we are having a baby! :)

While this blog is mainly to family and friends who know most of the details to this story, I have some followers outside that realm, so I'll relay this the best I can ;)

I have been told for many, many years (early 20s in fact) that I would probably never be able to have kids and shouldn't be able to get pregnant without assistance because I have Poly Cystic Ovarian Syndrome (PCOS).  Anyone who has PCOS knows it's ups and downs.  It was very hard to fathom what the doctor's told me in the beginning, but after a LARGE amount of time (I mean years) I came to terms with the possibility of never having a child of my own.  It was heart breaking for me and took a lot of time to get through the anger of it all.  Anyway, I had finally come to terms with it and was living my life the best way I could and a few years went by and it weighed on my mind still but I could live with it.  Until one day in July on a trip to Urgent Care I found out I was pregnant.

Ben and I both were in shock!  I had been on birth control for the entire time we have been together (nearly 4 years).  We spent the next couple of weeks going to several different doctor's appointments, but didn't get any clear answers.  As women with PCOS know, you can give a false positive on a urine pregnancy test, so I wasn't a 100% convinced I was pregnant after the Urgent Care visit because that was all they did.  We scheduled an appointment with an OB/GYN, they did a urine test...same result.  However, while in the office for that first visit, they couldn't find the baby's heart rate with the fetal Doppler and weren't very clear as to if I was pregnant or not.  We learned that a tumor or a ruptured cyst can cause a false positive for pregnancy and with not finding the baby's heart rate, the other two alternatives seemed more likely. Neither of us was impressed with the Midwife we saw that day and her office manner.  She did want us to schedule an ultrasound to see what was going on...her words were to "date the pregnancy or see if something else is going on", never being specific.

I was a wreck at this point and Ben and I both left more confused than when we started out.  It was another week until we could get in for an ultrasound, LONGEST WEEK OF OUR LIVES!!!  However, at the ultrasound we saw our baby for the first time, very small, but thriving :) Many emotions flooded over me at once, it hit me that I was going to be a mother, this wasn't cancer, how did I end up pregnant so easily, are we ready for this, etc.  I will admit it took me some time to accept that I was going to have a baby, it seemed so surreal! I really couldn't understand how I got pregnant and was angry at the fact that I got pregnant so unexpectedly when we weren't evening trying.  Lots of women try and try and never get pregnant, PCOS or not, so I was confused.

Ben and I found a new doctor, who we both love!  She is very informative and knows tons about PCOS because her daughter suffers from it.  I learned from her at my first appointment that I probably got pregnant because I lost a lot of weight (about 30 lbs) and was taking Metformin to treat insulin resistance (pre-diabetes and a symptom of PCOS).  The combination made my body ready to get pregnant, little to my knowledge :)

We've now seen the baby in two different ultrasounds, the latest being a week ago.  We are having a boy, due February 19th 2014 - Hayden Fredrick and we couldn't be happier.  He is developing just fine and stubborn as can be even in the womb, which means trouble for us when he is born. 

I decided to start this blog back up based on a suggestion by Ben's Aunt in Albuquerque as a way to keep everyone I know, near and far, updated on Hayden.  I'm going to update as much as my schedule allows and will start posting photos of the sonograms, my expanding belly and Ben and I's life as I can.  Please feel free to comment, share, email me.  I'd love to hear form everyone :)

Pull-apart Cupcake Golf Hole

Good Morning to you all!

Today's post is a "cake" I made for my fiance's step dad's  and my fiance's birthday in November.  Before we get to food part, I'd like to share a few pictures with you all of my little man, Gio.  Yes Gio is my dog, but I think of him more as my son :) Anyway, yesterday Ben and I decided to run to Sam's Club for water - raise your hand if you never just come out with what you went there for - I am raising mine lol

Sam's Club is very smart about how they do things, the way most stores are, to get you to buy something you would never consider.  While walking to the water, in the back of the store of course, we passed the pet aisle and on the end cap were dog toys of different marvel super heroes - Avenger, Spiderman, Hulk, etc.  Well seeing that we hadn't bought Gio a new toy in probably two weeks, just kidding it's been longer, we decided to pick one for him and we chose the Hulk.  I wish the below was a better picture of him with his new toy, but he was having such a ball playing with it that it was hard to capture a decent picture :)

Pull-apart Cupcake Golf Hole

My blog today is going to deal more with how to put this together and decorate than actually baking.  When it comes to cupcakes, I use a box mix; however, I do create my own wonderful butter cream icing  , which I will share with you all.

Cupcakes
Any box cake mix flavor you want, plus all the ingredients to make it

Butter Cream Icing
1 C butter, softened (it has to be butter, margarine has too much oil and it will separate when it gets warm)
1 t vanilla extract
1 lb powdered sugar (use a scale to measure, I'll explain in a moment)
1-3 t milk
Almond extract or whatever extract other than vanilla you may want

Decorating Items
1 btl green sugar crystals
2 pretzel sticks (small one)
Fruit roll-up/fruit by the foot
White gum balls
White parelis
Nilla wafers, crushed 
White smartie

When I designed this "cake", I did it in stages.  A few days before the get together, I made the cupcakes and put them in the fridge.  I have learned over the years that it is easier to already have the cupcakes made and focus on just decorating the day of the event.  There is never enough time in the day to bake cupcakes, decorate accordingly, get ready and out the door in time.  So, make it easy on yourself and make these ahead of time :)

On the day of the event, start by making your butter cream icing .  You'll start by creaming together the butter and vanilla on a higher setting on your mixer.  Be sure to put the butter out the night before, so the morning of it will be nice and soft.  I warned up above about not using margarine.  I have tried a few different methods with margarine all with the same result  As the icing sits and/or if it is hot, the icing will become grainy and separate.  It still tastes delicious, but the look is not the same.  Please remember to use butter :)

Only cream the butter and vanilla until combine, don't over mix!  Once the creaming is done, turn the speed down on your mixer to low, and add the powdered sugar, slowly!  I cannot stress enough how important it is to use a scale to measure out the powdered sugar.  I know that it comes in 2 lb bags, so you figure if you use have it will be fine.  I have learned the important of measuring ingredients and the difference it makes to texture of your final product. 

As you add the powdered sugar a little at a time, let it incorporate, once it's incorporate, add more, until you have it all in there.  At this stage it is going to be very thick, which is why we add milk :) I usually use 1 t milk and about 2 t almond extract.  It's a judgement called, decide what consistency you want the icing and go for it :)

The original recipe did not call for almond extract, but I added it to give the icing that extra "wow" factor and it works!  I haven't tried any other extracts except almond, but I plan to and am sure it will work the same.

It is now time for the fun part, put this all together. 

Split the icing into three different colors - white, pale green and dark green.  You want to get the different parts of the golf hole.  You need 4 white cupcakes, 8 pale green and 7 dark green.  Icing each cupcake with it's particular color.  For the white cupcakes, take the crushed Nilla wafers in a bowl and roll of the top of the cupcake in it, so it looks like this:



Take the dark green cupcakes and roll in the green sugar:

The next is a series of pictures, how I put mine together, you can ultimately do whatever design you want, just remember to keep the white together, pale green together and dark green together.  I put mine on a cookie sheet for easy transport. 





Are you starting to see the golf hole?  :) We have a few more embellishments to add.  On the pale green cupcakes, put some icing in a piping bag and pipe dots all over to create a grass look, see below:





This will take time.  It's a slow process.  I will say upon looking back that I should have refrigerated the icing for a bit to let it settle.  My hands were hot and the icing became very liquidy by the end.  I was actual doing this outside on our porch because it was colder out there then in our apartment :)

Once you've completed the "green".  Finish up by piping the same dots around the outer edge of the dark green cupcakes, the fairway/tee-off area.





 We're almost done, just some final little touches.  Roll out a piece of the fruit roll up and cut into a triangle.  Wrap around a pretzel stick and place in the "green" (pale cupcakes" wherever you want the hole to be.  You can take some icing and pipe on a hole number if you want before assembly.  Next take a dab of icing and place on the bottom of a white smartie and stick to a pretzel stick.  Place in the "fairway/tee-off area" wherever you like.  Finally, take some white gum balls and some whire parelis (little decorating balls used as sprinkles).  Coat the gum balls in a little corn syrup and roll in the white parelis - you've made golf balls.  Sit one "golf ball" on the tee in the fairway and one anywhere you'd like.

Berries 'n' Cream Crepes

I am back and ready to starting blogging again about my food endeavors!  I have had quite an excited 11 months, lots of ups and downs, but the ups outweighed the downs!


Ben proposed to me on March 3rd, 2012! I, of course, accepted and we are planning our wedding for October 18th, 2014. We had decided last minute to go horseback riding about an hour south of ABQ and after the ride, as I am still on my horse, he proposed!  It was very romantic and I was completely surprised!  He picked the ring all by himself and did a fantastic job!

Berries 'n' Cream Crepes 
Shortly after my last post, I came across this recipe for crepes.  I have wanted to try making crepes for a while, but was afraid I didn't have the right tools to do so.  After speaking with some colleagues at work, they convinced me that I could do this. 

I found this recipe at the Taste of Home website (www.tasteofhome.com).  If you have never used this website, I highly recommend it.  I find a lot of great recipe ideas there and most are straight forward.

Anyway, back to the crepes.  Here are your ingredients:

 

Crepes
1/3 C 2% milk
2 T beaten egg
1/4 t vanilla extract
1/4 C all-purpose flour
1-1/2 t confectioners' sugar
1/4 t baking powder
Dash salt
2 t butter, divided

 Filling
2 oz cream cheese, softened
3 T plus 1/2 t confectioners' sugar, divided
4 t 2% milk
1/8 t vanilla extract
1/3 C ea fresh blueberries, strawberries and raspberries (or any combination equaling a C, I use what is on hand)

You want to plan to make these the night before.  The crepe batter needs to sit for at least an hour, but after reading a lot of different food blogs, they suggested over night.  You want the ingredients to really adhere to each other. 

Combine the first seven ingredients of the batter in a small bowl.  Cover and refrigerate for 1 hour, at least, longer is better.

Once the batter is ready, take a small skillet and melt 1 t of butter. 

Stir the batter and once the skillet is hot, not to hot, pour about 2 T of the batter into the center of the skillet. Pick the skillet up and evening distribute the batter around the pan.  Just use circular motions until it is evenly across, it should be thin.

 Now it is time to let it cook for a few minutes, until the top looks dry, and then we're going to flip it.  I know this sounds scaring, this is the part I feared the most about making crepes.  Someone at work suggested just letting it cook through without flipping, which does work, but I was being adventurous and decided to try flipping.  I suggest using a very wide spatula.  The trick is to get as much of the crepe on to the spatula before you flip.  When you are ready to flip, make sure you are quick, but with a steady hand and don't go too high above the pan.  A smooth even flip is what you are looking for. 


 Yours should look similar to the picture above.  This was the first one I did and as you can see, I could have let it cook just a bit longer on the bottom.  Once you flip the crepe, allow it to cook only 15-20 seconds longer and then remove to a wire rack to cool.  Repeat above for 3 more crepes, adding butter as need.

For the filling, in a small bowl, beat the cream cheese, 3 T confectioners' sugar, milk and vanilla until smooth.  Spread 1 T on each crepe, top with 1/4 C fruit and roll up.  Sprinkle with remaining confectioners' sugar.  Ben and I added cool whip on top as well :)


Viola!  You have completed your first crepes breakfast :) Believe me they are as delicious as they look :)

Homemade Flour Tortillas

I must apologize for being away for soooooooo long.  Working full-time, volunteering in my church playing piano, being with my wonderful boyfriend and our "children, while trying to keep up a blog and fend off illness and other disasters has proven difficult.  My plan is to try to do better because I certainly haven't stopped experimenting with recipes since April, I just haven't had time to post them!  I hope to clear that up over the next couple of weeks, since I have lots of pictures and lots of recipes that I've tried and loved and some I tried and didn't love as much :) I've spent a great deal of the last few months re-evaluating who I am and who I want in my life.  As anyone who as gone through this process, it takes up a lot of time.  I have come to realize that the people you expect to be there, won't always be there and the one's you didn't count on will pull-through in a big way.  I've struggled with many issues through my 28 years, most happening while I was a child and some since college.  After all this time, I've come to terms with the reality and faced-up to the disappoint that the problems I had with some people will never change.  They will never see the situation from another's perspective and it is time I dealt with the hurt of all of that.  I realize I am getting deep in this blog, esepcially when it's titlted - "Homemade Tortillas Recipe".  However, I wanted to explain my abscence and while I've sat down to write a blog several times, something has happened and my focus had to be shifted to that situation.  I don't have many followers on this blog, but to whomever does follow me, my apologies for the hiatus, I had an "emotional" breakdown of sorts and could only handle so much! :) On to the recipe...

Since moving out on my own, I have always loved making tacos, burritos, enchiladas, etc, but hate paying for tortillas - especially now as the price climbs and climbs.  I never found a recipe that was simple and could be made quickly, until this one.  It comes from Taste of Home and it doesn't get any easier than this:

Recipe:

2 cups all-purpose flour
1/2 tsp salt
3/4 c water
3 tbsp Olive Oil

I told you this was simple :)

Start by combining the flour and salt in a large bowl.  Stir in the water and the oil. 


Next roll out the dough on a floured surface and knead 10-12 times.  You may need to add some flour or water to smooth out the dough.  Divide dough in equal portions, I got 10 - the recipes says you'll get 8 :)




Now take each ball of dough and roll out to make your tortilla.  Do not worry about them looking like a circle, they still eat the same :)


As you can see, mine are not round, more oval.  Some were even more oddly shaped, gives them character.

Now, heat a large non-stick skillet and once heated spray with cooking spray.  Add a tortilla and let cook until bubbles start to form.  Depending on your stove this may take a little time.  The trick is to let the pan get hot, spray with cooking spray (not a lot) and then set the tortilla in.  Once it starts to bubble, turn over and let cook on the other side - watching for more bubbling.  You can check them to see how they are doing, the preference is all yours on how brown to make them.  Once done, place on a plate and cover and repeat with each dough ball





Viola! Now fill them with whatever you desire and enjoy!

The best part about these is you can double, triple, etc the recipe and freeze the leftovers for use later!  Freezer friendly is always a plus in my eyes!
